Bearnaise Potatoes

Easy Bearnaise Potatoes

   This recipe came about because my family loves cheesy potatoes but that recipe can be very time consuming and it never really has the flavor I want. These are roasted potatoes that are covered in bearnaise sauce and then browned. Super simple! This has been a year of time on my hands but lack of will to post anything. I had time to organize my life and be fit as a fiddle but that did not happen. It has been filled with fun days shared with my grandson Presley and trying to redefine our budget in the midst of going from two incomes to one. I have tried to keep my joy in the chaos this year and I hope all of you are well too.

Ingredients

  • 10 Potatoes, peeled and cubed
  • 1 Yellow or white onion, halved and sliced.
  • 1 Full bulb of garlic minced or two teaspoon of pre minced garlic.
  • 2 Tablespoons of butter
  • 2 Tablspoons of olive oil
  • Salt and pepper to taste
  • 2 Packages of bearnaise sauce, any brand. I have tried two and they both work great.

Instructions

  • Pre heat oven to 425 degrees
  • Peel and chop potatoes
  • Chop onion and garlic
  • Spray a baking sheet with non stick spray
  • Spread potatoes and onion on a baking sheet.
  • Toss in garlic, salt, and pepper.
  • Melt butter and pour the oil and butter over potatoes.
  • Mix with all together on baking sheet
  • Shake the tray until everything is level
  • Place in the oven and bake for 25 minutes or until they lightly brown. 
  • While they bake, prepare bearnaise sauce as per the instructions on the package.
  • Toss them around when they are browned.
  • Pour sauce over potatoes and place back in the oven.
  • Bake until lightly brown and bubbly.
